For the month of May, we are serving the belly-warming classic, the Toulouse Cassoulet. It’s a traditional French casserole-style dish of roasted duck leg and pork belly, smoked lardons, white beans, tomatoes, herbs de Provence, bread crumbs and toasted baguette. Perfect for lunch on a cool Autumn Wellington day.

Did you know that the cassoulet originates from the south of France? It’s named after the traditional cooking vessel, the cassole, a deep, round, earthenware pot with slanting sides.
